The harvest takes place manually during the optimal ripening period in September. The winemaking is carried out in thermoregulated stainless steel containers, kept at a controlled temperature between 16°C and 20°C for a period of 15-20 days. Part of the process takes place in barriques and tonneaux. Subsequently, the wine refines its character during storage in the cellar in stainless steel tanks at a constant temperature between 12°C and 15°C, maintaining contact with its fine lees. Stabilization takes place in cold storage before bottling.

The color of this wine is straw yellow with greenish reflections. The scent is delicately floral and fruity, with notes of green apple. On the palate, it manifests itself with a dry, fresh and slightly citrine profile, characterized by a generous structure and a delicate persistence.

This wine lends itself magnificently to accompanying vegetable soups and risottos, fish-based dishes (both baked and boiled), white meats, smoked cured meats and ricotta.
