The Sangiovese di Romagna DOC “Riserva Raspo'” from SaDiVino, hailing from Predappio, presents a measured profile with a clear sense of place. In the glass it shows an intense ruby color; on the nose there are notes of ripe red fruit, light floral nuances and an earthy component that evokes the soil. The aromatic profile is accompanied by discreet spicy hints and an unobtrusive elegance that leaves room for bottle development. On the palate it confirms the expected Sangiovese structure: lively acidity, tannins that are present but well integrated, and a finish that leans toward sapidity rather than fruity monotony.

This wine pairs well with meat dishes, savory tomato-based recipes and aged cheeses, where its freshness and tannic build can balance flavors. Serve at around 16–18 °C; a short period of aeration in a decanter can help open the aromas. Suitable to enjoy now, it also shows a modest propensity to evolve for those who prefer greater aromatic development over time.
