The Pasada represents a more complex and mature version of this style, with long years of aging that impart aromas of bread crust, toasted almonds, and intense marine notes, accompanied by a dry, savory, and very elegant palate. The alkaline component and sapidity make it perfect to pair with fishery products, seafood, and light Mediterranean cuisine dishes. Thanks to its refined structure and aromatic persistence, this Manzanilla Pasada is an excellent example of the winemaking tradition of Jerez, capable of telling the deep connection between terroir, grape variety, and craftsmanship.

Ageing
Criaderas and solera system for wines and brandy; biological ageing under a flor veil for fino/manzanilla style wines; oxidative ageing for amontillado and oloroso. Brandy indicate different ageing durations (e.g. 10, 15, 25 years) and are matured in casks previously seasoned with sherry.
