Vindice is a Pas Dosè classic method sparkling wine made by the Poggio della Dogana winery in Castrocaro Terme (Loc. Le Volture) and Brisighella, from vineyards located between 250 and 300 m a.s.l.
A quality bubble, produced from the white vinification of Sangiovese grapes. The harvest is done manually during the first ten days of September, followed by refinement with the start of refermentation one year after harvesting with permanence on the lees for a minimum of 18 months, with disgorgement at 0 dosage.
Its color is a brilliant intense straw yellow with a fine and delicate perlage. On the nose the scent stands out decisively with floral hints of white flowers and fruity aromas of yellow pulp fruit. The finish is prolonged with characteristic notes of bread crust and a hint of white licorice. On the palate it immediately expresses itself with a decisive but very elegant note, followed by a very pleasant freshness and the marked sapid notes that characterize it.
Excellent glass as an aperitif or to accompany first and second courses based on fish.
