Piancastello Rosè Riserva is a Trento DOC sparkling wine that comes from Pinot Nero and Chardonnay grapes grown on soils with limestone dolomitic characteristics, near the Castle of Monreale - Königsberg. One of the rare vineyards in the region with a structure like an authentic clos (French word that refers to a vineyard surrounded by walls or walls) surrounded by woods and trained with the Guyot system for over 30 years with vines from Champagne.
The harvest is carried out manually in small boxes, to ensure their integrity until pressing. The first fermentation is carried out partly in barrique and partly in steel, with the classic refermentation method provided by Trentodoc in the bottle. The aging on the lees is at least 48 months in order to obtain an otherwise unattainable elegance with a minimum "dosage".
It has a splendid pale pink color, with an extremely fine and elegant, minute and continuous perlage. The perfume is particularly intense and complex, of great finesse, with fruity aromas and notes of bread crust. The taste is lively and pleasantly unique.
A classy Trentodoc excellent as an aperitif but ideal for the whole meal. Perfect with fish appetizers, steamed shellfish and raw fish.
