La Vecchia Vigna is made with 100% Barbera grapes carefully selected during the harvest, placed in small boxes and immediately taken to the cellar. Here the crushing and fermentation of the sugars takes place in stainless steel tanks at a controlled temperature of 28-30°C. The drawing off follows and, after 2 rackings, the control of the malolactic fermentation begins. The refinement is carried out in 50 hl oak barrels and a part in ex-wine barriques, for at least one year, and a further 6 months in the bottle before being put on the market.
It has an intense ruby red color, after a few years soft garnet hues appear. The slight spiciness with the typical aroma of Barbera immediately stands out on the nose. The sip is harmonious and full, of excellent pleasantness capable of satisfying the palate from the first sip.
It is recommended to combine it with traditional first courses, white and red meats, as well as medium-aged cheeses.
