Ironico is a wine with a particular and unique taste created with Chardonnay grapes that ensure a full-bodied and persistent sip, embellished with the fruity and intense aromas of Malvasia, all enriched with bubbles that add a great pleasure to drink.
The vineyards are cultivated on clayey soil, with a spurred cordon counter-espalier training system; the harvest takes place in the early hours of dawn towards the first ten days of August, to avoid the heat of the period and best preserve the freshness and aroma of the grapes. The vinification involves a soft pressing of the whole bunches, the static cold clarification, with fermentation at a controlled temperature with the addition of selected yeasts. During the first months of the year the second fermentation takes place, with the Charmat method, for a period of about 20 days, to form the carbon dioxide which gives the wine its characteristic "sparkling".
It has a straw yellow color with greenish reflections, and a fine and persistent perlage. Intense aromas of white flowers, pear, green apple and citrus fruits arrive on the nose. The sip is harmonious and fresh, with the right acidity.
The lively and effervescent taste makes it persistent and very pleasant on the palate, making it an excellent aperitif glass, perfect with appetizers and fish and shellfish-based dishes, excellent with young cheeses and vegetables.
