The Vouvray Sec Le Peu Morier from Domaine Careme is an excellent example of how the Chenin Blanc grape can majestically express itself in the Loire region of France. This wine presents a surprising complexity, with aromatic notes oscillating between white flowers, green apple, and subtle hints of honey and almond. On the palate, it reveals itself as soft yet vibrant, thanks to a fresh acidity that beautifully balances the structure. The minerality is palpable, harmoniously intertwining with a slightly toasted aftertaste that lingers long after the first sip. Produced in limited quantities, this Vouvray Sec is the result of careful winemaking and partial maturation in both new and used barrels, adding complexity without overpowering the fruity and fresh profile of the wine. Excellent when served chilled, it pairs beautifully with fish dishes in sauce or fresh goat cheeses.
