The story
Eden Mill was founded in 2012 to bring brewing and distillation back to the St Andrews area, on a site with production traditions dating back centuries. After years of activity and a phase of site redevelopment, the company completed a new facility on the University of St Andrews' 'Eden' campus: the new distillery became operational and filled its first cask on 7 April 2025. The company combines production, visitor activity and direct retail, also offering cask ownership programs and guided tours.
Production philosophy
To produce spirits rooted in the local territory, highlighting local botanicals and sustainable practices. Eden Mill aims to tell the connection with St Andrews and the Eden Estuary, using local ingredients where possible and integrating initiatives to reduce environmental impact in the construction and management of the new site.
Territory
Guardbridge, on the shores of the Eden Estuary, close to St Andrews (County of Fife), Lowlands, Scotland
Awards and recognition
Results at the London Spirits Competition 2024: Gold - The Guard Bridge (92 pts); Gold - The Art of St Andrews 2023 (91 pts); Gold - Golf Gin (90 pts). Other medals/silver for Bourbon Cask, Sherry Cask and Love Gin expressions (see official competition certificates).
Production method
Integrated production of gin (distillation in dedicated stills) and whisky (fermentation and double distillation with wash and spirit stills). The site is equipped with copper stills and facilities for mash tuns and washbacks; the new installation is designed to operate with renewable energy and to fill and mature spirits in selected casks.
Distillation
Copper pot still distillation with plant including a gin still, wash and spirit stills; 'grain-to-glass' process for single malt whisky and botanical distillation for the gins. The new plant was installed with copper stills and equipment for mashing/fermentation.
Ageing
Maturation in oak casks using different types of barrels depending on the expression: ex-bourbon, ex-sherry (Oloroso, PX), Scottish oak casks and finishes in selected casks for some limited editions.
