On the palate it reveals a soft structure, medium body and a freshness that supports its development; the entry is enveloping, then a touch of salinity and a pleasant warmth appear in the mid-palate. The finish is long, with malty echoes and a touch of dry spices. Best enjoyed neat or with a drop of water to open its aromas; pairs successfully with dark chocolate, aged cheeses or moments of evening contemplation.

Distillation
Copper pot still distillation with plant including a gin still, wash and spirit stills; 'grain-to-glass' process for single malt whisky and botanical distillation for the gins. The new plant was installed with copper stills and equipment for mashing/fermentation.
Ageing
Maturation in oak casks using different types of barrels depending on the expression: ex-bourbon, ex-sherry (Oloroso, PX), Scottish oak casks and finishes in selected casks for some limited editions.
