Sur Lie is a sparkling wine fermented in the bottle made with 100% Grechetto Gentile or Pignoletto grapes. The vinification takes place through a soft pressing, both of whole and destemmed grapes, at a controlled temperature, then the must decants naturally at a low temperature to obtain natural clarification. The first fermentation is carried out in stainless steel, the bottled wine will then carry out the second refermentation in which it will develop the natural bubbles. Undisgorgeted wine has the typical yeasts on the bottom of the bottle, contact with them causes the product to continue to evolve and mature.
Sur Lie has a slightly veiled pale yellow color, with marked platinum reflections. The olfactory profile denotes hints of yellow peach, apricot, apple, pear and grapefruit, finely blended with floral and mineral aromas, as well as notes of yeast and pastry. The sip is dry, fresh and dry, with a tasty acidity and a very pleasant mineral finish.
An "out of the ordinary" wine capable of conquering the palate, to be served in combination with cured meats, boiled and roasted meats.
