Produced without the addition of dosage (Pas Dosé), this sparkling wine reflects the purity and authenticity of the blend of Pinot Noir and Chardonnay grapes, carefully selected from the best vineyards of the Calissano winery. The choice not to add dosage liqueur enhances the natural structure of the wine and its liveliness, offering a direct tasting experience intensely linked to the territory.

At sight, the Classic Method Pas Dosé Alta Langa presents a brilliant straw yellow colour, animated by a fine and persistent perlage which testifies to the careful vinification and prolonged aging on the yeasts, which enriches the wine with complexity and aromatic nuances.

On the nose, the bouquet is broad and refined, with notes of white pulp fruit, citrus, white flowers and hints of toasted bread and dried fruit, which reflect the elegance and depth of the blend. In the mouth, the wine is extremely balanced, with a lively acidity that supports a rich and compact structure, leading towards a long and clean finish, characterized by notable minerality and freshness.

Ideal as a sophisticated aperitif, the Classic Method Pas Dosé Alta Langa from Calissano is also perfect in combination with seafood appetizers, dishes based on raw or lightly cooked fish, and soft cheeses.
