The grapes are delicately pressed to preserve the integrity of the skins. Before fermentation, the must obtained is cold decanted. Fermentation takes place at a controlled temperature of 16-18 °C. After fermentation, the wine is racked and left to mature on the lees until the following spring, allowing the extracted aromas to fully express themselves and balance with the structure of the wine.
The wine has a straw yellow color with greenish reflections. On the nose, delicate and floral notes of acacia emerge. On the palate, it manifests itself with freshness and liveliness.
This wine goes well with fish, seafood and first courses with vegetable sauces.
