It comes from grapes from the vineyard cultivated on the S. Ilario farm, in a hilly position with south-east exposure at an altitude of 300m above sea level, on clayey soil, alternating with legumes and spontaneous grassing. The system has the form of sylvoz breeding, and includes only 100% white or white grapes, with certified organic management.
The harvest is done manually, with the bunches placed in boxes of two quintals and cooled before pressing. The vinification involves a soft pressing of whole grapes only, in an inert atmosphere, and cold static decantation. Maturation takes place in stainless steel for about 3 months.
In the glass it shows off a beautiful straw yellow color with greenish reflections, the nose receives aromatic aromas of sage and lemon verbena, with floral aromas of chamomile and jasmine, and citrus hints of cedar. In the mouth it has good sapidity, freshness and structure, and a balanced softness with a glyceric component.
Delicate and vertical citrus aroma. It goes perfectly with seafood appetizers, excellent with chickpea and clam pasta first courses, and ricotta ravioli with oil and Parmesan, perfect with asparagus omelette. Ideal as an aperitif.
