After destemming the grapes, cold skin maceration in a closed press for at least 12/18 hours follows, followed by soft pressing in nitrogen saturation at low temperature. The must then undergoes decantation before starting fermentation in steel, followed by a period of rest on the noble lees for 8/12 months with weekly bâtonnage. The refinement continues in the bottle on the yeasts for at least 36 months. After disgorgement, the wines are stabilized and refined in the stack for 5/6 months.

The result is a wine with a bright yellow color, tending towards golden, with fine and dense bubbles. The olfactory impact is decisive and intense, with iodine, flint and chalky notes; hints of exotic fruit, such as pineapple and mango, blend harmoniously with shades of cedar and bergamot. Delicate floral notes of acacia and orange blossom emerge, followed by hints of sweet spices, almond and honey.

The sip is creamy, inviting, full and dry, supported by flavor and a pleasant citrus freshness. A refined tasting experience that reflects the attention to detail and craftsmanship in the production of this fine wine.
