It all starts with the selection of base wines made by the winemaker or the "chef de cave"; the careful choice is based on the final cuvée which will be the result of their skilful assembly, thanks to this each Spumante will express specific and peculiar characteristics.
This is how the "Classic Method" was born, and after the first fermentation in steel tanks, it provides for the second fermentation in the bottle with the addition of the "liqueur de tirage" or a syrup based on wine, sugars, minerals and selected yeasts. The path continues with the second fermentation in the bottle, constantly monitored with the control of the atmospheres; the slower it is, the more persistent and fine the foam will be. At the end of the second fermentation, the wine will continue to remain in contact with the yeasts for a longer or shorter period, with final disgorgement and top-up.
In the glass it has a beautiful pale straw yellow color with golden reflections. The nose is broad and intense, with deep hints of yellow fruits and white flowers. The taste on the palate is sweet, soft and balanced.
Casarito is well suited to accompany all the best occasions of conviviality, in combination with desserts, especially with dry pastries and tarts in general.
