Valpolicella Superiore comes from grapes from the vineyards of Vendri, in Valpantena. The grapes are carefully selected and harvested manually from mid-September to finish the first two weeks of October. The fresh grapes are then de-stemmed but not pressed. The vinification of the grapes takes place immediately after harvesting in stainless steel. A short cold maceration is followed by alcoholic fermentation at a controlled temperature.

Daily pumping over and delestage allow to fully express the potential of the grapes. Spontaneous malolactic fermentation follows. The aging takes place half in steel and half in French oak tonnenaux for at least 12 months; it does not follow aging in the bottle but the wine is immediately ready to be tasted.

In the glass it is limpid with a ruby red color with purple reflections. On the nose it presents an elegant and complex bouquet, from which hints of ripe red fruits stand out, mixed with precious spicy notes. On the palate it is dry and persistent with lively tannins that characterize a fresh and dynamic drink.

A medium-structured red that is perfect in combination with red meats, game, boiled meats, risottos and first courses with important sauces.
