The grapes are carefully selected and harvested manually starting from mid-September and ending in the first week of October. The fresh grapes are then destemmed but not pressed. The vinification of the grapes takes place immediately after harvesting in stainless steel. A short cold maceration is followed by alcoholic fermentation at a controlled temperature.

Daily pumping over and delestage allow the maximum potential of the grapes to be expressed. The refinement takes place in steel for at least 7 months; it does not follow aging in the bottle but the wine is immediately ready to be tasted.

In the glass it appears clear and clear, with a ruby red color with violet reflections. An elegant bouquet with the prevalence of ripe red fruits that mix with fine spicy notes inebriates and conquers the sense of smell. A drink of medium structure and persistence, which releases aromatic fruit notes in the mouth well linked to a very elegant evolving tannin. The aromas of liquorice and pepper are also well defined.

A frank, sincere and everyday red, excellent wine for all meals. However, it gives its best if accompanied by first courses and soups, not too elaborate meat-based second courses, cured meats and medium-aged cheeses.

Winery history
Originally established as a hillside estate near Parona/Valpantena, the estate retains ties to local tradition and has developed over time, expanding its vineyards and holdings. The company website and industry sources report activity documented since the 1970s and more recent land acquisitions in Vendri.
Production philosophy
Wine production focused on biodiversity and sustainability: a certified organic approach, oversight of viticultural practices and protection of the territory as guiding principles to produce wines expressive of the terroir.
