The Pinot Noir vineyards are grown in San Damiano al Colle, on the first and second hills of Oltrepò Pavese, on soil deriving from calcareous marl, sandstone disintegration and a clayey component, at an altitude of 280/350 m a.s.l. with spurred cordon training system and traditional Guyot.
The vinification involves a soft pressing of the grapes and an immediate separation from the skins; the must obtained rests in stainless steel tanks at a controlled temperature of 14°-20°C for a period of about 15-20 days, during which alcoholic fermentation takes place. After racking, maturation continues in steel for about 2 months; it is then decanted into autoclaves where refermentation takes place according to the Charmat or Martinotti method. After about 9 months, the wine is bottled and will refine for another 3 months before being put on the market.
When poured, it shows off the characteristic straw yellow color with greenish reflections. On the nose it has a complex and intense bouquet punctuated by floral and fruity aromas of banana, pear and apple. An extremely soft, structured and elegant sip, full-bodied and with a good retro-olfactory persistence.
An ideal glass for an aperitif, also perfect throughout the meal, especially with fish-based dishes, white meats and cheeses in general; absolutely try the pairing with pizza.
