Thanks to the innovative application of new winemaking methodologies, Grillo has proven to be a variety capable of producing wines of notable structure, body, complexity and aging capacity. The harvest of the grapes is carried out scrupulously with a manual selection of the bunches, followed by delicate pressing to obtain a must that is left to decant naturally at a low temperature for 48 hours.
The clear part of the must is sent to fermentation using indigenous yeasts and maintaining a controlled temperature. This fermentation begins in stainless steel containers and continues in French oak barrels. This approach aims to preserve the primary aromas of the wine and enhance its bouquet during the aging period. The wine is subsequently aged for 12 months in the barrels in the presence of suspended yeasts, using the "bâtonnage" technique, until it reaches full maturity. Finally, the wine refines further in the bottle, reaching its best expression.
It offers freshness and complexity, it is known for its fruity and citrus scents that blend into an enveloping and inviting bouquet, with a touch of minerality. The sip is elegant and harmonious, with a pleasant freshness that accompanies the fruity flavors.
