The winemaking follows a traditional approach, taking place on the skins in steel containers at 25°C. During this process, a gentle stirring of the hat is carried out to extract the color subtly. Malolactic fermentation follows, followed by a refinement period of at least 6 months in concrete tanks and large wooden barrels.
The result is a ruby red wine of medium intensity with a scent that evokes red berries and black cherries. In the mouth, it is round and juicy, with soft tannins. This wine stands out for its elegance and finesse, typical characteristics of Pinot Noir, rather than focusing on concentration and power.
It is recommended to combine it with light appetizers, white meats and even tasty fish preparations.
