Oltremonte is an excellent wine that comes from 100% organic Sauvignon grapes, grown in the province of Verona, on land at an altitude of 850-900 m a.s.l.
The grapes are harvested by hand in mid-September and early October, in the cellar they are de-stemmed and softly pressed. The must obtained is cold "cleaned" and fermented at a controlled temperature of 15°C. Subsequently the wine rests for 3 months on its lees with repeated batonnage, it is then bottled and refined in the bottle for 3-4 months before being put on the market.
At the sight it shows off a straw yellow color with greenish reflections. On the nose, the bouquet is broad and varied, with aromatic persistences and very particular vegetal perceptions standing out, ranging from pepper to sage to move on to fruity hints of citrus and white peach. On the palate it is dry, supported by a fine and persistent mineral shoulder.
A satisfying and particularly pleasant sip, an excellent aperitif glass or to drink in combination with fish-based dishes, white meats and cheeses.
