The grapes are harvested when they have reached perfect phenolic ripeness. The winemaking process begins in the cellar starting from a delicate pressing, fermentation in stainless steel tanks at a controlled temperature between 28 and 34 ° C, with frequent pumping over and punching down. After the malolactic fermentation, the wine is decanted into oak barrels for the 3-year refinement period, envisaged by the disciplinary.
When poured it has a garnet red color with orange reflections; over time these change and intensify. The nose is conquered by its intense floral and fruity bouquet, with aromas of wild violets and red fruits. The sip is velvety, full and ample, with a spicy finish and hints of vanilla.
A particularly long-lived red wine, suitable with important meat dishes and aged cheeses.
