Distillation and production

Production method

Rhum agricole produced from fermented sugarcane juice (vesou) and distilled on copper creole column stills. The distillery manages a nursery and plantations, presses the cane immediately upon arrival and transfers the distillate to maturation according to the different cuvées.

Distillation

Copper creole column stills (two plate columns), typical rhum agricole distillation; distilled with head/final cuts around 70–73% ABV before maturation.

Ageing

Maturation in oak barrels (new or used) with in‑house management of toasting/charring; barrels vary in capacity and origin and part of the aging is managed to develop vanilla, caramel and spicy profiles.

Producer history Agricole J.M

The origins lie at the site of Habitation Fonds‑Préville; in 1845 Jean‑Marie Martin purchased the property and converted the sucrerie into a distillery, marking barrels with his initials (J.M). During the 20th century the estate passed to the Crassous de Médeuil family; in 2002 the local Groupe Bernard Hayot (GBH) acquired the distillery and subsequently invested in modernization while preserving production traditions.

Production philosophy

To showcase terroir and the freshness of raw material: production based on locally grown cane (with its own nursery), respect for the surrounding ecosystem and transmission of traditional know‑how to express the characteristics of Macouba's volcanic soils.

Fonds‑Préville, Macouba (slopes of the Montagne Pelée), Martinique. Volcanic soil rich in andesite and a tropical climate that influence the aromatic profile of the cane.
