Rhum JM Canopèe Hors D'Age is an agricole that presents a rich, well-balanced profile. On the nose there are notes of fresh cane and ripe fruit, followed by an interplay of vanilla, honey and a subtle woody toast; the alcoholic component is warm but never overpowering, supported by good softness. On the palate it shows body and smoothness: the sip is rounded, with hints of dried fruit and orange peel alternating with sweet spices and a savory, slightly oxidative nuttiness that extends the finish.

Best enjoyed neat, with a large ice cube or a few drops of water to open up its aromas. Excellent as an after-dinner contemplative spirit, it pairs well with dark chocolate, desserts based on dried fruit or not-too-intense aged cheeses; in cocktails it adds structure to short, complex drinks. Serve at room temperature or slightly chilled to appreciate its nuances and maturity.

Distillation

Copper creole column stills (two plate columns), typical rhum agricole distillation; distilled with head/final cuts around 70–73% ABV before maturation.

Ageing

Maturation in oak barrels (new or used) with in‑house management of toasting/charring; barrels vary in capacity and origin and part of the aging is managed to develop vanilla, caramel and spicy profiles.
