Monte Zovo's Amarone della Valpolicella is crafted through the traditional practice of appassimento, where the Corvina, Rondinella, and Molinara grapes are gently dried for several months, concentrating their sugars and aromas. After fermentation, the wine ages in French oak barriques for a period ranging from 2 to 3 years, followed by further aging in the bottle.
Visually, it presents a deep ruby red color, which tends towards garnet with aging. On the nose, complex notes of ripe fruit like cherry and plum emerge, along with nuances of spices, chocolate, and a slight hint of tobacco. On the palate, the wine reveals a robust structure, balanced by pleasant acidity and velvety tannins, offering a long and persistent finish.
This Amarone is ideal for accompanying rich and flavorful dishes such as braised meats, stews, and aged cheeses. It is also perfect as a meditation wine, to be savored on its own to appreciate its complexity and depth.
