Amativo comes from Primitivo and Negroamaro grapes grown in the company plots of Guagnano, Sava and San Pietro Vernotico. The berries of the different vines reach perfect ripeness in different periods, but both during the month of September. The harvest is carried out manually with careful selection of the bunches. In the cellar, the grapes are destemmed and crushed, then left to macerate on the skins for 12-15 days. After the malolactic fermentation, it is aged in barrique for about 12 months.

It has a dark ruby red color with bright reflections tending towards purple. The nose has a rich and intense olfactory profile, characterized by hints of small dark berry fruits including wild blackberry, blueberry and black currant. Spicy notes of dark chocolate and roasting are added. A red wine with a full-bodied and structured sip, with a mature tannic texture and a velvety and harmonious finish, very persistent, spicy and fruity.
It is recommended to combine it with red meats and game; it is also perfect with aged cheeses.

Winery history
Cantele’s history begins with the Cantele family: after a 'reverse migration' from the Imola area, Augusto and Domenico, sons of Giovanni Battista and Teresa Manara, founded the company in the late 1970s. The business is now run by the third generation, which has expanded the product range and the company’s structure.
Production philosophy
A technical approach that respects the territory: enological precision, careful vineyard management and research and sustainability projects with scientific institutions, as well as sensory experiences to enhance culture and wine.
Terroir and vineyards
The winery operates in northern Salento, based in Guagnano. Its wines express the characteristics of the Salento territory, influenced by proximity to the sea and by the area's typical soils. Production is based on vineyards distributed throughout Salento.
