Pairing Red meats, game, aged cheeses
The aromatic profile blends dried rose and red berries with earthy notes and spicy nuances, with a slightly balsamic hint that adds complexity. On the palate it is driven by lively acidity and well-defined yet ripe tannins, which support an elegant structure and a sapidity that invites a second sip; the persistence is consistent, with fruity returns and a slight mineral thread that gives clarity to the finish.

It is a wine that commands respect at the table while remaining refined: it pairs well with red meat dishes, not-too-fat game, rustic sauces and aged cheeses, and finds excellent expression with mushrooms and oven-baked preparations. Serve at moderate temperature to appreciate its balance and freshness; with a few years in the cellar it will evolve further, releasing riper, more aromatic shades without losing the backbone that makes it recognizable.
