Colombaio di Tassi adheres to these principles with a careful selection of Sangiovese grapes, which are left to mature for an extended period, typically at least four years, with two of those years in wooden barrels, to refine the complexity of its bouquet and palate structure.

Visually, the wine presents an intense ruby red color, which can shift to garnet with aging. On the nose, it stands out for its aromatic profile evoking sensations of ripe red fruits, enriched by hints of vanilla and earthy spices thanks to the aging in wood.
