Pairing Aperitifs, fish, shellfish
Elegant Blanc de Blancs born from Premier Cru chardonnay grapes, this Champagne signed Marie Le Brun for Folonari shows a subtle luminosity and an extremely fine perlage. On the nose it opens with white flowers, lemon zest and a hint of green apple, accompanied by a mineral note that supports its tension; light suggestions of toasted bread emerge as the glass opens, without weighing it down. The balance between acidity and softness is measured, the structure is compact without losing the typical grace of Champagne whites.

On the palate it is fresh and saline, with a subtle creaminess that envelops the palate and enhances the aromatic persistence; the finish remains dry and lively, ideal for those seeking precision rather than opulence. It pairs successfully with raw seafood, oysters, shellfish and steamed fish dishes, but also holds up well alongside an elegant aperitif or fresh cheeses; serve well chilled to appreciate its tension and fragile elegance.

Winery history
The Folonari family has deep roots in the Brescia area and has been involved in wine production since the late 18th century. At the end of the 19th century the headquarters were moved to Brescia, and in the early 20th century the family acquired the historic Ruffino winery. In the 1960s Nino Folonari began a shift toward quality with the acquisition of estates in Chianti. In 2000 Ambrogio and Giovanni Folonari established Ambrogio e Giovanni Folonari Tenute, which brings together several estates in Tuscany, while the Folonari brand offers an extensive range of table wines and appellation wines.
Production philosophy
Enhance the production areas, combine tradition and innovation, and focus on grape quality to produce wines that are distinctive and closely tied to their territory; the company's plan includes investments in the estates and attention to the diversity of terroirs.
Terroir and vineyards
Headquarters and estates are mainly in Tuscany, with production and a presence also in north-eastern regions such as Veneto and in areas like the Collio; the company’s history begins in the Bresciano and includes references to territories around Lake Garda and beyond.
