On the palate the sip is round and enveloping, with good structure and a soft tannic framework that supports the aromatic progression toward a pleasing persistence. Subtle sapidity and the return of fruity notes make the finish harmonious and satisfying. Best enjoyed neat in a tulip glass at room temperature, it also lends itself to small pairings: dark chocolate, hazelnut-based dry pastries, or aged cheeses for those seeking contrast.

Distillation
For the Daniel Bouju cognacs: distillation in a traditional discontinuous pot still (historic still of 16.5 hl) and subsequent maturation in oak barrels; for the Tenute Folonari grappas: discontinuous distillation using steam-heated copper stills.
Ageing
Maturation in wooden/oak barrels for the cognacs and ageing in various wooden casks (in some cases barrique) for the assorted grappas.
