After the manual harvest in September, winemaking involves cold maceration for approximately 24 hours, followed by static defecation. Fermentation takes place in steel at a controlled temperature of 16°C for approximately 20-25 days. Subsequently, the wine ages in steel on the yeasts for approximately 6 months.

The result is a straw yellow wine. On the nose, citrus notes of lemon and cedar open up which intertwine with the floral tones of orange blossom and jasmine. On the palate, it is full-bodied, but at the same time well supported by acidity, giving the tasting a rare freshness. The finish is long, contributing to a complete sensory experience characterized by the liveliness of citrus fruits, floral complexity and a pleasant tasting persistence.

Winery history
Born and raised on the slopes of Etna, Cottanera is a family-run estate operating since 1960. Over the years the estate has focused on highlighting the contrade of Etna, aiming to translate the differences of each parcel into distinct, recognizable wines.
Production philosophy
The winery states an approach based on respect for the land and natural rhythms: many vineyard operations are carried out by hand. The winery values local knowledge, giving a central role to the work teams and the area's agricultural traditions, and aims for quality and faithful representation of the territory.
