At the center remains juniper, supported by three selected botanicals that hold up well to the higher alcohol content; on the nose there's a citrus clarity with hints of light spices, while on the palate the profile is full, direct and dry. The structure shows a balance between alcoholic warmth and cleanliness, with a persistence that invites another sip. It's a gin that performs at its best both in mixed drinks and simply enjoyed with a large ice cube, when the temperature helps temper the intensity. In mixes it works well with tonics of a neutral profile or in more structured cocktails that need character; in the kitchen it pairs well with more flavorful fish, shellfish and citrus preparations, as well as boards of fresh cheeses to balance its saltiness.
