It shows immediate aromas of Amalfi Coast lemon peel, bright and intense, more reminiscent of freshly grated zest than of the juice. Intertwined white flowers and a subtle herbaceous note enrich the profile without weighing it down. The sip is clean and well-bodied: the sweetness is full but controlled, supported by a fresh backbone that prevents it from becoming cloying. The texture is soft, with a pleasant warmth that accompanies a citrusy, slightly saline peel finish, leaving the palate fresh and satisfied.

It is best served very cold, in small glasses as an after-dinner drink to finish lightly, or as an ingredient in summer cocktails where it brings clarity and citrus character. Paired with vanilla ice cream, semifreddos, or desserts made with fresh cheeses, it enhances the combinations with its acidity. Distillation

For the Daniel Bouju cognacs: distillation in a traditional discontinuous pot still (historic still of 16.5 hl) and subsequent maturation in oak barrels; for the Tenute Folonari grappas: discontinuous distillation using steam-heated copper stills.

Ageing

Maturation in wooden/oak barrels for the cognacs and ageing in various wooden casks (in some cases barrique) for the assorted grappas.
