Winery history
The institution originated around the Hôtel-Dieu in Beaune, founded in 1443 by Nicolas Rolin and Guigone de Salins. Over the centuries its vineyard holdings were built through bequests and donations, and the estate’s wines have traditionally been sold at auction each year on the third Sunday in November, a practice established in the nineteenth century.
Production philosophy
Vineyard management combines the aims of protecting public health and enhancing the viticultural heritage: proceeds from sales fund the hospital and the upkeep of the estate, while agronomic management focuses on soil care and sustainability, with an official conversion to organic farming completed recently.
