On the palate the profile is full yet well balanced: alcoholic warmth is present but restrained, soft tannins support the structure, and a persistence that reprises the smoky and spicy tones of the initial impression. It is well suited to be enjoyed neat, at room temperature or slightly chilled, and stands up to savory pairings — grilled meats, spiced preparations or aged cheeses — as well as offering an interesting finish alongside small dark chocolate desserts.
