The Primitivo di Manduria DOC "Tautor" by Castello Monaci is a red wine that captures the essence and intensity of the Primitivo grape variety, grown in the rich and sunny lands of Puglia, in particular in the Manduria area. This area is renowned for the production of high-quality Primitivo, characterized by a rich concentration of flavors and a powerful structure. Castello Monaci, with its long tradition and passion for viticulture, produces "Tautor" with the aim of offering a high-level interpretation of Primitivo di Manduria, enhancing its unique characteristics and aromatic depth.

The "Tautor" stands out for its intense ruby ​​red color, with violet reflections that underline its youth and liveliness. On the nose, the wine offers a complex and enveloping bouquet, dominated by notes of ripe red fruits, such as black cherry and plum, enriched by nuances of spices, chocolate and a light touch of vanilla, the result of the aging in wood which adds complexity without overpowering the expression of the fruit.

In the mouth, "Tautor" reveals a robust and enveloping structure, with soft and well-integrated tannins that support a full body. The balance between aromatic richness, the natural sweetness of the fruit and a lively acidity gives the wine a harmonious and persistent character, with a long and satisfying finish that invites another sip.

Winery history
The building known as Castello Monaci has historical origins dating back to the Renaissance/medieval period and takes its name from an ancient settlement of Basilian monks. Over the centuries the fortification’s use and ownership have changed several times, and it is now managed by the Memmo Seracca Guerrieri family, who have enhanced the historic residence by integrating winemaking, hospitality and events.
Production philosophy
It combines respect for native Salento grape varieties and the local terroir with the use of modern winery technologies: temperature-controlled vinification, ageing in barriques, and a focus on wine tourism through wine tours and a wine museum that showcases local traditions.
Terroir and vineyards
Located in the heart of Salento, in Contrada Monaci near Salice Salentino and San Pancrazio Salentino, the estate is set among vineyards and olive groves and is influenced by the proximity of the Ionian and Adriatic seas. The soils include tuffaceous formations typical of the area.
