Rosso Riserva del Fondatore IGT of the Roeno Winery is a wine that comes from berries from Cabernet Franc, Cabernet Sauvignon and Merlot vines.
The harvest is done manually with the arrangement in crates, starting from the first ten days of October, then the grapes are gently de-stemmed and softly pressed. The must obtained is fermented in stainless steel containers at a controlled temperature between 25 and 27 ° C, with punching down obtained through the Eureka system. Malolactic fermentation in French wooden tonneaux follows, in which it remains to refine for about eight months. The wine is then bottled and stored in thermo-conditioned rooms for about 10 months.
Intense ruby red color appears when poured. It offers to the nose a strong and ample perfume, rather complex, with marked spicy and mineral hints, mixed with fruity notes of morello cherry, plums and currants. The taste is persistent and elegant, with soft and well-developed tannins, and a decisive freshness.
Perfect in combination with savory first courses, excellent with red meat and game, as well as medium and long-aged cheeses.
