On the palate it confirms a linear, measured profile: the mouthfeel is soft, harmonious, with good depth and a persistence that leaves a trail of sweet spices and bitter cocoa on the finish. It is ideal to enjoy neat at room temperature, in a glass that concentrates the aromas, and pairs well with nut- or chocolate-based desserts, aged cheeses and moments of evening reflection. A cognac that aims for class rather than power, suitable for those who appreciate the purity of the distillate and the elegance of Grande Champagne.

Distillation
For the Daniel Bouju cognacs: distillation in a traditional discontinuous pot still (historic still of 16.5 hl) and subsequent maturation in oak barrels; for the Tenute Folonari grappas: discontinuous distillation using steam-heated copper stills.
Ageing
Maturation in wooden/oak barrels for the cognacs and ageing in various wooden casks (in some cases barrique) for the assorted grappas.
