Pairing Fish, shellfish, fresh cheeses
Citrus peel, elderflower and a herbaceous thread reminiscent of tomato leaf, all supported by a mineral note that lends clarity. On the palate the wine shows a lean but well-defined profile, with lively acidity and a sapidity that cleanses the mouth; the body is medium, the substance balanced and the delicacy of the sensations makes the sip elegant without being thin. The finish is persistent and recalls the initial aromas with a pleasant tension.

Measured, easy-drinking style, ideal for those seeking an expressive but not overpowering Sauvignon: it pairs naturally with light fish dishes, shellfish, sushi and complex salads where herbs and citrus predominate, but it also stands up to fresh cheeses. It is recommended to serve it cool, around 8–10°C, in a large glass to enhance its aromas; best enjoyed young but it retains a modest capacity to evolve over a few years.
