Elegant sparkling wine produced by the traditional method, Elizabeth Spencer's ExS Brut immediately shows a distinct personality: fine, persistent perlage that lifts a clean, unobtrusive bouquet, where bright citrus and green apple intertwine with softer notes of white flowers and yeast. The dryness is well calibrated, supported by fresh acidity and a saline streak that lengthens the profile without weighing it down, ideal for those seeking cleanliness and pleasure in the sip.

On the palate the pace is smooth, the enveloping bubbles make the sip creamy without losing liveliness; the finish remains crisp with a slight almond note that invites a second glass. Excellent as an aperitif or paired with raw seafood, fish salads and fresh cheeses, it also lends itself to more informal moments thanks to its balance and drinkability. It is immediately approachable but rich in nuances, surprising for its purity and overall elegance. Serve well chilled and not in too large a glass to enhance its freshness.

Winery history
Founded by business and life partners Elizabeth Pressler and Spencer Graham, Elizabeth Spencer released its first label in 1998. In 2006 the winery moved its operations into the historic 1872 brick post office building in Rutherford, converting it into a tasting room and an inviting garden. In 2021 Elizabeth Spencer joined the Boisset Collection, maintaining its winemaking identity under new ownership.
