The Valdobbiadene Prosecco Superiore DOCG - Extra Dry Valdobbiadene - Charmat Method - Santi is a sublime expression of Prosecco Superiore, coming from the renowned hills of Valdobbiadene, the beating heart of the production of superior quality Prosecco. This area, characterized by an ideal microclimate and fertile soils, allows the Santi winery to grow Glera grapes of exceptional quality, then transformed into a Prosecco Superiore which shines with elegance and finesse thanks to careful vinification and refermentation in autoclaves according to the Charmat Method .

At sight, Santi's Prosecco Superiore presents itself with a brilliant straw yellow colour, enriched by a fine and persistent perlage that dances in the glass, anticipating the quality and liveliness of the sip. On the nose, the bouquet is expressive and enticing, with aromas of green apple, pear, floral notes of wisteria and acacia, and a delicate touch of citrus, which together create a fresh and captivating olfactory harmony.

On the palate, it offers a perfect balance between sweetness and acidity, a distinctive feature of the Extra Dry category. Its creamy effervescence caresses the palate, revealing flavors consistent with the olfactory sensations and leading to a pleasantly fruity and persistently fresh finish, which invites another sip.

This Prosecco Superiore is ideal as a refined aperitif or as an accompaniment to light appetizers, fish and seafood dishes, but also with not too sugary desserts, where its moderate sweetness and freshness can create surprising and delicious combinations.

Winery history
Cantina Santi was founded as a winery in Illasi and has been present in Valpolicella since the 19th century. During the 20th century the Santi family introduced technical innovations and progressively focused on high-end wines; in 1974 the winery became part of Gruppo Italiano Vini, which reinforced investments and facilities while preserving its local identity.
Production philosophy
Santi claims a style tied to the sense of place of Valpolicella: it favors the predominant use of Corvina in its selections, aging in large traditional casks, and the use of local woods to enhance the aromatic qualities typical of native grape varieties. The approach combines oenological research with respect for local practices.
Terroir and vineyards
Santi's vineyards and selections are concentrated in Val d'Illasi and the classic areas of Valpolicella, using a vineyard-selection approach across different exposures and microclimates to produce wines that reflect the local terroir. The winery also works with vineyards in other Veronese appellations such as Soave, Bardolino and Lugana.
