The Don Pedro Ximenez Natural Sweet Wine from Toro Albalà winery is one of the enological gems of the Montilla-Moriles region, known for producing wines of exceptional quality. This wine is a pure expression of the Pedro Ximenez grape variety, renowned for its ability to produce intensely sweet and deep wines.

The harvest of Pedro Ximenez is carried out with special attention to the drying of the grapes, which are left to dry in the sun to concentrate sugars and aromas. The result is a wine with a deep and bright amber color, which anticipates the rich olfactory notes that are released to the nose.

Upon first taste, this natural sweet wine offers intense sensations of raisins, dried figs, dates, and a subtle note of honey, enriched by hints of chocolate and coffee. In the mouth, the sweetness is masterfully balanced by the acidity, creating a perfect equilibrium that will never tire the palate. The sensations of dried fruit and caramel are persistent and lead to a long and pleasantly complex finish.

Served at a temperature of about 12-14°C, the Don Pedro Ximenez Toro Albalà is ideal as a meditation wine or as an accompaniment to rich desserts, such as dark chocolate or cakes with dried fruit. The PDO has historically been associated with the Pedro Ximénez grape, which accounts for the vast majority of the vineyard area in the region. Distinctive traditional practices: asoleo to obtain naturally sweet wines and the use of tinajas/vasijas and barrels for aging. Production of a broad stylistic range: from young whites to fortified wines and sweet PX wines. Production area centered in the southern part of the province of Córdoba and encompassing 17 municipalities. Formal recognition of the appellation linked to the Estatuto de la Viña y el Vino of the 1930s, with subsequent regulation by the Consejo Regulador.
Winery history
The area's winemaking vocation dates back to antiquity: Montilla and the surrounding localities are already mentioned in Roman times and show a long tradition. The geographic names Montilla and Moriles were protected by the so‑called Estatuto de la Viña y el Vino, and the modern appellation consolidated its regulatory framework with the creation of the Consejo Regulador and the regulations published in the mid‑20th century. Since then the area has continued to specialise in the production of Pedro Ximénez and in local aging techniques.
Production philosophy
Showcase the indigenous Pedro Ximénez variety and the traditional practices of the area — asoleo, fermentations and typical ageing systems — combining respect for tradition with technical adaptation to ensure quality and territorial identity.
Terroir and vineyards
The production area lies in the central-southern part of the province of Córdoba, between the Genil and Guadajoz rivers, with gently rolling terrain and albariza/marl soils. The DOP fully includes Montilla, Moriles, Doña Mencía, Montalbán, Monturque, Nueva Carteya and Puente Genil, and parts of Aguilar de la Frontera, Baena, Cabra, Castro del Río, Espejo, Fernán Núñez, La Rambla, Lucena, Montemayor and Santaella; there is also a "Superior" subzone characterized by superior albariza soils.
