11 years in Bourbon Hogshead, bottled by House of McCallum, it presents a direct and honest profile. On the nose there is delicate peat smoke and maritime hints, balanced by sweet notes of vanilla and honey and a touch of citrus zest that brings freshness. The palate is smooth, medium-bodied, with the peat remaining the protagonist but joined by light hints of caramel and warm wood; the balance between savoriness and sweetness makes the progression pleasant without excess. In tasting it convinces for its aromatic clarity and persistence: a savory finish, with smoky returns and a light spiciness that closes without weighing down.

It lends itself to contemplative sipping but also pairs well with small accompaniments — smoked shellfish, hard cheeses or a bar of dark chocolate — and improves with a few drops of water to open the bouquet. A bottle to keep for moments when you’re after both character and drinkability.
