On the nose there are malt notes, ripe fruit and light spice impressions, accompanied by sweeter nuances that develop with exposure to air. On the palate it maintains a balance between softness and structure, with fruity returns and a finish that tends toward delicate spices; the persistence is measured. It lends itself to slow tastings in appropriate glassware and can be paired with dark chocolate, aged cheeses or meat preparations, depending on personal preferences. Store away from direct light and temperature fluctuations.

Distillation
Traditional procedure with a "partial-triple" distillation regime producing a new make commonly described as distillate 2.81; use of worm tubs for condensation, which impart structure and salinity to the spirit.
Ageing
Maturations in various types of casks depending on the expression: refill and first-fill casks are used, with extensive use of sherry casks for some references; certain special releases are finished in French oak or other selected woods/finishings.
