In Salento, the 2021 vintage was characterized by a generally warm and remarkably dry climate. These conditions favored the complete ripening of the red grapes, simultaneously allowing the grapes to maintain their aromatic freshness thanks to the influence of the sea breezes.
After the destemming process and delicate pressing, the must was transferred to stainless steel tanks, where alcoholic fermentation took place at a controlled temperature not exceeding 28°C. The maceration phase, managed with delicate pumping over and deléstage, was prolonged for approximately 13 days. The wine then underwent a refinement process of 70% in barriques and 30% in tonneaux, before being bottled.
It has an intense ruby red color, tinged with light purple hues. On the nose, notes of red fruit, plum and raspberry emerge mainly, combined with spicy sensations of coffee, licorice and tobacco. On the palate, the entry is soft and broad, characterized by a good structure supported by an elegant tannic texture. The finish is long and persistent, with a pleasant aftertaste of cherries in alcohol.
