The Etna DOC Brut Rosè by Palmento Costanzo is a sophisticated and seductive expression of the vineyards located on the volcanic slopes of Mount Etna. This sparkling wine is produced using the classic method, also known as the Champenoise method, which involves a second fermentation in the bottle, giving this rosé exceptional complexity and maturity.

The cuvée is primarily composed of Nerello Mascalese grapes, an indigenous variety from Sicily that stands out for its ability to convey finesse and elegance. Visually, the wine presents a pale and delicate pink color, embellished by fine and persistent bubbles. On the nose, intense aromas of strawberry and raspberry emerge, along with a slight note of toasted bread, due to the long maturation period on the lees.

On the palate, the Etna DOC Brut Rosè by Palmento Costanzo offers a crisp sip with a vibrant freshness that perfectly balances its creamy and rich structure. The fruity aromas blend harmoniously with hints of volcanic minerality, typical of the Etna terroir.

This wine is ideal as an aperitif but can gracefully accompany an entire meal, pairing particularly well with light appetizers, fish dishes, or Mediterranean cuisine. An authentic expression of Sicily, it will delight lovers of quality rosé sparkling wines.

Conservative restoration of the historic winepress integrated with a bio-architectural cellar Vineyards distributed among the contrade of northern Etna Production focused on terroir expression: each parcel is vinified separately. Certified organic cultivation and adoption of ISO standards for business management Use of Ovum barrels for some aging and the traditional method for sparkling wines.
Winery history
The Costanzo family recovered and restored a historic palmento on the northern slopes of Mount Etna, which they purchased and returned to use in recent years. Today the estate is run by family members assisted by a local technical team. The restoration of the palmento and the acquisition of pre-phylloxera vineyards have guided the estate’s development and a production focused on contrada expressions.
Production philosophy
Enhance the diversity of Etna's contrade through separate vinifications, minimize intervention to preserve the integrity of the fruit, and adopt bio-architecture and sustainability measures in the winery, with selective use of stainless steel, tonneaux and large casks to respect varietal and terroir expression.
Terroir and vineyards
Located in Contrada Santo Spirito, in the Passopisciaro area. Terraced vineyards on volcanic soils, gobelet-trained and supported by dry-stone walls of lava rock, situated mainly between 600 and 800 meters above sea level.
