The Etna DOC Brut Metodo Classico by Palmento Costanzo represents an elegant sparkling wine interpretation of the native vines grown on the slopes of Etna. This sparkling wine is produced according to the classic, or traditional, method, which involves second fermentation in the bottle, followed by a period of aging on the yeasts which enriches the wine with complexity and creaminess.

In the winemaking tradition of Palmento Costanzo, attention to the territory and quality is also reflected in this sparkling wine. The winery, located in one of the most fascinating and unique terroirs in Italy, uses mainly Carricante grapes, a white grape variety that gives freshness and acidity, and to a lesser extent Catarratto, which adds body and aromatic depth. This combination results in a sparkling wine that expresses the mineral essence and vibrancy of Etna's volcanic soil.

Production scrupulously follows the classic method, with primary fermentation taking place in stainless steel to preserve the fruity and floral characteristics of the grapes. After bottling, the wine undergoes a second fermentation in the bottle, remaining in contact with the yeasts for a variable period, usually at least 18-24 months, before dégorgement. This process not only gives the wine greater complexity and structure, but also creates the characteristic fine and persistent bubbles that distinguish it.

In appearance, Etna DOC Brut Metodo Classico shows a brilliant straw yellow colour, with a fine and constant perlage. On the nose, it opens with intense aromas of white pulp fruit, citrus and floral notes, enriched by nuances of toasted bread and yeast, the result of aging on the yeasts. In the mouth, the wine is lively and fresh, with a perfect balance between crisp acidity and a light creaminess. The flavors of green apple, lemon and a delicate minerality blend in a clean and persistent finish.

Ideal as an aperitif, the Etna DOC Brut Metodo Classico by Palmento Costanzo is also perfect in combination with light appetizers, fish and seafood dishes, or as a companion for celebrations and special moments. Its elegance and refinement make it a distinctive example of Sicilian sparkling wine, capable of competing with the big names of classic method sparkling wines at an international level.

Winery history
The Costanzo family recovered and restored a historic palmento on the northern slopes of Mount Etna, which they purchased and returned to use in recent years. Today the estate is run by family members assisted by a local technical team. The restoration of the palmento and the acquisition of pre-phylloxera vineyards have guided the estate’s development and a production focused on contrada expressions.
Production philosophy
Enhance the diversity of Etna's contrade through separate vinifications, minimize intervention to preserve the integrity of the fruit, and adopt bio-architecture and sustainability measures in the winery, with selective use of stainless steel, tonneaux and large casks to respect varietal and terroir expression.
Terroir and vineyards
Located in Contrada Santo Spirito, in the Passopisciaro area. Terraced vineyards on volcanic soils, gobelet-trained and supported by dry-stone walls of lava rock, situated mainly between 600 and 800 meters above sea level.
