It is obtained from the careful distillation of fermented pomace of red berried grapes, all coming from the Veneto area, through an artisanal distillation by means of a discontinuous cycle and direct steam plant, among the few still in operation, at low pressure and low temperature. The 4 small boilers of which it is composed are rigorously made of copper, as per tradition. The very slow distillation cycle processes small batches of pomace (cooked) at a time, for a duration of about an hour and a half.
Once distilled, the grappa remains in steel containers for about 8 months, during which time the gustatory softness improves; the "dark" is then transferred to the Fiscal Warehouse where it will age in 350-litre Allier oak barrels, new and second-hand, for more than twelve months. During the last period, the color, the aromas and grappa wood toasting.
In the glass it shows a straw yellow colour; medium-intense hints arrive on the nose, with slight hints of vanilla and notes of yeast and honey. The taste is full-bodied and harmonious, but it is not aggressive even if it has a good personality.
It goes perfectly with medium-intense chocolate, is excellent with a good medium-aged cow's milk cheese, and is very pleasant accompanied by a good cigar.
