The harvest of the Sangiovese grapes follows with a careful selection, only the healthiest and ripest will be chosen. The vinification takes place in red, with maceration for 15-20 days, which will thus increase the structure of the Sangiovese. In order to keep polyphenols at bay, skilful processing is essential, which includes delicate pumping over and fermentation at a controlled temperature of 26-28°C. The refinement is carried out in Slavonian oak barrels for a period of at least 2 years.
In the glass it shows a brilliant ruby red color with garnet glazes. The nose perceives fruity hints of blackcurrant and plum, with tertiary aromas that bring back licorice and green tobacco. in the mouth it is particularly fresh, with light tannic sensations and a very long finish.
It goes perfectly with red meats, and is perfect with stews and aged cheeses.
